Chinese Food:Spicy and crisp small crucian

Makings:
small crucian
Ingredient:
salt of right amount,cooking wine of 2 large spoon,a big piece of ginger,5 parts of garlic,the dust of red pepper of right amount,the dust of cumin,scallion flowers.
A Practice:
1. Clean the small crucian ,then use salt and cooking wine to pickl one hour symmetrically now and then .
2. Cut parts of garlic to be mince and cut ginger to be thick slices .

3. Boil the temperature of oil to be its 60% ,append fish with slices of ginger to fry two times ,fish it out when it is fried to be golden brown crisp and silvery by small fire .

4).Boil a little oil of cleaned pan ,stir-fry mince garlic and dust of red pepper to be spicy ,append soy sauce and a little water to fix to be liquor ,then trickle oyster juice and chicken essence to absord the liquor ,pour into frying sharksucker .Spinkle the cumin chopped green onion and stir up .
Tips :
1. Clean up the sharksucker carefully .Don’t leave over the black membrane and cheeks in its paucnch .
2. Don’t make the tempreture of the oil too high .Fry them symmetrically to a crisp .
3. The head and fishbone all and can be eaten and they taste very spicy ,pepper and crisp.
